PANCAKE DAY!!!

For those of you who are Christian, you should be aware that today
is Shrove Tuesday. Today officially starts the begining of Lent.

For the rest of us however, today is Mardi Gras! Fat Tuesday!
Paczki Day! Or, in the Barker household, PANCAKE DAY!!!

Ever since I was a little kid, it has been a tradition is my family to make pancakes on Fat Tuesday. I can remember watching my Dad make the batter for the pancakes as my Mom put mini-sasuage in the oven.

In honour of this tradition, I would like to share with you my family's recipe for our delicious pancakes:

As an extra step, we like to add an over-ripe banana to our recipe.
From my expeience with this recipe, adding fruit or chocolate chips (about half a cup) usually makes a good addition. I had some luck with peanut butter (about 1tbs per batch) a few years back. Don't add honey though, it's a bad thing.
